Chef's Bio

Chef Chaun Bescos has a passion for cooking with fresh local ingredients that began while he was growing up on an organic farm in Hawaii. He went on to graduate from Western Culinary Institute in Portland, Oregon. Currently executive chef at Red Fish, he has previously worked in the company's other restaurants, Alexander's and Old Oyster Factory. Chaun has a close relationship with local growers and the Hilton Head Farmer's Market and works with them to tailor Red Fish's featured dishes around which foods are in season. Chef Chaun enjoys returning to his roots in Hawaii every few years for inspiration. He represents the restaurant at many community festivals and events each year.
